How To Make One-pot Spanish Rice and Beans

A flavorful and comforting dish made with rice, beans, and aromatic spices, all cooked in one pot.

Serves:

Ingredients

  • 1 cup white rice
  • 1 can black beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced onion, minced garlic, and bell pepper. Cook until softened.

  2. Add the white rice, cumin, paprika, and chili powder to the pot. Stir to coat the rice in the spices.

  3. Pour in the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat to low and cover. Simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.

  4. Stir in the black beans and season the dish with salt and pepper to taste. Cook for another 5 minutes to heat through.

  5. Serve the one-pot Spanish rice and beans hot, garnished with fresh cilantro.
