How To Make Spanish Beans with Chicken & Chorizo

Ingredients

  • 2 chicken breasts, diced
  • 150g chorizo, sliced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, chopped
  • 400g canned white beans, drained and rinsed
  • 1 can (400g) diced tomatoes
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, cook the diced chicken and sliced chorizo over medium heat until browned. Remove from skillet and set aside.

  2. In the same skillet, sauté the onion, garlic, and red bell pepper until softened.

  3. Add the white beans, diced tomatoes, smoked paprika, cumin, salt, and pepper. Stir well to combine.

  4. Return the chicken and chorizo to the skillet and simmer for 20 minutes, stirring occasionally.

  5. Serve the Spanish beans with chicken and chorizo hot, garnished with fresh parsley.
