Ingredients

  • 1 cup chickpea flour
  • 1 cup water
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme

Instructions

  1. Preheat the oven to 450°F (230°C).

  2. In a mixing bowl, whisk together the chickpea flour, water, olive oil, salt, pepper, rosemary, and thyme until smooth.

  3. Let the batter rest for 30 minutes to allow the chickpea flour to absorb the liquid.

  4. Place a well-seasoned 12-inch cast-iron skillet in the preheated oven for 10 minutes.

  5. Carefully remove the hot skillet from the oven and pour the batter into it.

  6. Bake for 20 minutes, until the edges are crispy and the center is set.

  7. Remove from the oven and let cool for a few minutes before slicing.

  8. Slice into wedges and serve warm.
