How To Make Leftover Turkey Enchiladas Recipe

Turn your holiday leftovers into a delicious and spicy Mexican dish with these mouth-watering enchiladas!

Ingredients

  • 2 cups shredded leftover turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup salsa
  • 1/2 cup sour cream
  • 2 cups shredded cheese (Mexican blend or cheddar)
  • 8 flour tortillas
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.

  2. Place shredded turkey, black beans, salsa, and sour cream in a mixing bowl. Mix well and add salt and pepper to taste.

  3. Place a couple of spoonfuls of the mixture onto each tortilla and roll up. Place the enchiladas in a greased baking dish.

  4. Pour any remaining mixture over the enchiladas and sprinkle with shredded cheese.

  5. Cover the dish with foil and bake for 20-25 minutes or until cheese is melted and enchiladas are heated through.

  6. Serve with additional salsa and sour cream as desired.
