Ingredients

  • 4 medium zucchini
  • 1 carrot
  • 1 red bell pepper
  • 1/2 cup snow peas
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions

  1. Use a spiralizer or julienne peeler to turn zucchini and carrot into noodles. Set aside.

  2. In a small skillet, toast sesame seeds over medium heat until golden brown. Set aside to cool.

  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic to make the dressing.

  4. In a large bowl, combine zucchini noodles, carrot noodles, sliced red bell pepper, snow peas, green onions, and cilantro.

  5. Pour the sesame dressing over the vegetables and toss until well coated.

  6. Sprinkle toasted sesame seeds on top for garnish.

  7. Serve immediately and enjoy!
