Ingredients

  • 4 cups cooked rice (preferably day-old)
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis), optional
  • 1 tablespoon fish sauce
  • 1 teaspoon chili paste, optional
  • 3 green onions, sliced
  • 4 fried eggs, for serving
  • Sliced cucumber, for serving

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium heat. Add the garlic and onion, and sauté until fragrant.

  2. Add the carrots and sauté for 3-4 minutes until they start to soften. Add the bell pepper and peas, and cook for an additional 2-3 minutes.

  3. Push the vegetables to one side of the pan and add the cooked rice to the other side. Break up any clumps of rice and mix with the vegetables.

  4. In a small bowl, whisk together the soy sauce, sweet soy sauce (if using), fish sauce, and chili paste (if using). Pour the sauce over the rice and vegetables, and stir to combine.

  5. Cook for an additional 3-4 minutes, stirring occasionally, until the rice is heated through and starts to brown slightly.

  6. Stir in the sliced green onions and remove from heat.

  7. Serve the nasi goreng hot with a fried egg on top and sliced cucumber on the side.
