How To Make Arancini balls

Ingredients
- 1 cup Arborio rice
- 4 cups vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup finely chopped parsley
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil, for frying
- Marinara sauce, for serving (optional)
Instructions

In a large saucepan, bring the vegetable broth to a simmer. Add the Arborio rice and cook until al dente, about 20 minutes. Drain any excess liquid.

In a mixing bowl, combine the cooked rice, Parmesan cheese, mozzarella cheese, and parsley. Mix well.

Take a spoonful of the mixture and shape it into a small ball, about the size of a golf ball. Repeat with the remaining mixture.

Dip each rice ball into the beaten eggs, then roll it in breadcrumbs to coat evenly.

In a deep pan or skillet, heat vegetable oil over medium heat. Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Serve the Arancini balls hot with marinara sauce on the side, if desired.
