Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup finely chopped parsley
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil, for frying
  • Marinara sauce, for serving (optional)

Instructions

  1. In a large saucepan, bring the vegetable broth to a simmer. Add the Arborio rice and cook until al dente, about 20 minutes. Drain any excess liquid.

  2. In a mixing bowl, combine the cooked rice, Parmesan cheese, mozzarella cheese, and parsley. Mix well.

  3. Take a spoonful of the mixture and shape it into a small ball, about the size of a golf ball. Repeat with the remaining mixture.

  4. Dip each rice ball into the beaten eggs, then roll it in breadcrumbs to coat evenly.

  5. In a deep pan or skillet, heat vegetable oil over medium heat. Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

  6. Serve the Arancini balls hot with marinara sauce on the side, if desired.
