How To Make Pork with Cucumber & Apricot Couscous

Ingredients
- 1 lb pork chops, boneless
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 2 tbsp olive oil
- 1 English cucumber, sliced
- 1 cup couscous
- 1 cup chicken broth
- 1/4 cup dried apricots, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup almonds, slivered
- 2 tbsp lemon juice
- Salt and pepper, to taste
Instructions

Preheat the grill or stovetop grill pan to medium-high heat.

Season the pork chops with salt, black pepper, paprika, and garlic powder.

Drizzle olive oil over the pork chops and rub the seasoning in.

Grill the pork chops for 4-5 minutes per side, or until cooked to your desired doneness. Remove from heat and let rest for 5 minutes.

While the pork is resting, cook the couscous according to package instructions, using chicken broth instead of water.

Once cooked, fluff the couscous with a fork and stir in the sliced cucumbers, chopped dried apricots, chopped parsley, slivered almonds, and lemon juice. Season with salt and pepper to taste.

Serve the grilled pork chops over a bed of the cucumber and apricot couscous.
