Ingredients

  • 1 lb lamb, cut into cubes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup couscous
  • 1 cup chicken broth
  • 1/2 cup dried apricots, diced
  • 1/4 cup pine nuts
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a bowl, combine the olive oil, minced garlic, cumin, paprika, salt, and black pepper. Add the lamb cubes and toss until fully coated. Let it marinate for at least 10 minutes.

  2. Preheat a grill or grill pan over medium-high heat. Thread the marinated lamb cubes onto skewers.

  3. Grill the lamb brochettes for about 4-5 minutes per side, or until desired doneness.

  4. In a saucepan, bring the chicken broth to a boil. Stir in the couscous, dried apricots, and pine nuts. Cover and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

  5. Serve the lamb brochettes over a bed of apricot and pine nut couscous. Garnish with fresh parsley.
