How To Make Couscous with Courgette, Fried Onions & Herbs

Ingredients
- 2 cups couscous
- 2 cups vegetable broth
- 2 courgettes, sliced
- 1 onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Salt and pepper to taste
Instructions

In a large saucepan, bring the vegetable broth to a boil. Remove from heat and add the couscous. Cover and let it sit for 10 minutes.

Meanwhile, heat olive oil in a skillet over medium heat. Add the sliced onions and cook until they are golden brown and crispy. Remove from the skillet and set aside.

In the same skillet, add the sliced courgettes and sauté for 5-7 minutes, until they are tender and slightly golden.

Fluff the couscous with a fork and add the sautéed courgettes, crispy onions, cumin, paprika, turmeric, fresh parsley, and fresh mint. Season with salt and pepper to taste.

Toss everything together until well combined. Serve hot as a main dish or as a side dish to grilled meats or roasted vegetables.
