How To Make Copycat Subway Veggie Patty Recipe

A delicious vegetarian patty recipe similar to Subway’s, packed with protein and veggies.

Serves:

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup of old-fashioned oats
  • 1 carrot, grated
  • 1/2 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • 1 tsp of paprika
  • 1 tsp of cumin
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 4 buns
  • Toppings of your choice (lettuce, tomato, onion, mayo, mustard, etc.)

Instructions

  1. In a food processor, pulse the chickpeas and oats until combined but still chunky.

  2. In a pan, sauté the carrot, onion, and garlic in olive oil until tender.

  3. Add the chickpea mixture to the pan, along with the paprika, cumin, salt, and pepper. Cook for a few minutes until heated through.

  4. Let the mixture cool slightly, then form into 4 patties.

  5. Grill or fry the patties for about 10 minutes on each side, until browned and cooked through.

  6. Toast the buns and assemble the sandwiches with the patties and desired toppings.
