How To Make Richard Blais’s Chicken and Waffles Recipe
Crispy fried chicken served on top of fluffy waffles.

Ingredients
- 4 boneless, skinless chicken breasts
- 1½ cups flour
- 1 cup cornstarch
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp paprika
- 1 tsp cayenne pepper
- Salt and pepper to taste
- 2 cups buttermilk
- 2 cups vegetable oil
- 1 cup maple syrup
- 1 cup unsalted butter
- 4 large waffles
Instructions

Preheat the oven to 200°F.

In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

In another bowl, pour buttermilk.

Dip chicken in buttermilk and then coat with the flour mixture. Repeat this process for a crispier crust.

In a large pot or Dutch oven, heat vegetable oil over medium-high heat until hot.

Add chicken and fry until golden brown and cooked through, about 7-8 minutes.

Transfer the chicken to the oven and keep warm.

In a saucepan, heat the maple syrup and unsalted butter together until hot and the butter has melted.

Toast or reheat the waffles in a toaster oven.

Serve a piece of chicken on top of each waffle, and then drizzle with syrup.
