How To Make Pollo Loco Tamale Pie Recipe
A savory dish with chicken and vegetables in a tamale-inspired crust.

Ingredients
- 1 cup of masa harina
- 1/2 cup of chicken broth
- 1/4 cup of vegetable oil
- 1 tsp of baking powder
- 1/2 tsp of salt
- 2 cups of cooked and shredded chicken
- 1 can of black beans, drained and rinsed
- 1 cup of corn
- 1/2 cup of diced red bell pepper
- 3/4 cup of enchilada sauce
- 1/2 cup of shredded cheddar cheese
Instructions

Preheat oven to 375°F.

In a mixing bowl, mix masa harina, chicken broth, vegetable oil, baking powder, and salt.

Press mixture into a greased 9-inch pie dish.

In another bowl, mix chicken, black beans, corn, red bell pepper, and enchilada sauce.

Pour chicken mixture onto the crust.

Top with shredded cheddar cheese.
