How To Make Pollo Loco Tamale Pie Recipe

Ingredients

  • 1 cup of masa harina
  • 1/2 cup of chicken broth
  • 1/4 cup of vegetable oil
  • 1 tsp of baking powder
  • 1/2 tsp of salt
  • 2 cups of cooked and shredded chicken
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn
  • 1/2 cup of diced red bell pepper
  • 3/4 cup of enchilada sauce
  • 1/2 cup of shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a mixing bowl, mix masa harina, chicken broth, vegetable oil, baking powder, and salt.

  3. Press mixture into a greased 9-inch pie dish.

  4. In another bowl, mix chicken, black beans, corn, red bell pepper, and enchilada sauce.

  5. Pour chicken mixture onto the crust.

  6. Top with shredded cheddar cheese.

  7. Bake for 40 minutes or until golden brown.

  8. Let cool for 5 minutes before serving.
