How To Make Baked Pollo Loco Tacos Recipe
Crispy and flavorful, these baked Pollo Loco Tacos are a healthier version of the classic fast food dish.

Ingredients
- 8 small corn tortillas
- 1 lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
- 2 tbsp chopped fresh cilantro
- 1 lime, cut into wedges
Instructions

Preheat oven to 375°F.

Wrap tortillas in foil and place in the oven.

In a medium bowl, combine olive oil, chili powder, garlic powder, smoked paprika, cumin, salt, and pepper.

Cut chicken into bite-sized pieces and toss in the spice mixture.

Spread chicken out on a baking sheet and bake in the oven until cooked through, about 20-25 minutes.

Once the chicken is cooked, remove tortillas from the oven and fill each one with chicken.

Top with cheddar cheese and place back in the oven until cheese is melted, about 5-7 minutes.
