How To Make Homemade Pollo Loco Recipe
A flavorful and juicy version of the popular Mexican chicken dish, Pollo Loco.
Serves:
Ingredients
- 4 boneless and skinless chicken breasts
- 4 garlic cloves, minced
- Juice from 2 limes
- 2 tbsp. olive oil
- 1 tsp. smoked paprika
- 1 tsp. cumin
- Salt and pepper to taste
- 4 tbsp. chopped fresh cilantro
- 1 small jalapeno, seeded and chopped
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
Instructions

Preheat oven to 400°F.

In a bowl, whisk together garlic, lime juice, olive oil, smoked paprika, cumin, salt, pepper, and 2 tbsp. of chopped cilantro.

Place chicken breasts in a large plastic bag and add marinade. Seal bag and shake to coat chicken. Let marinate for 10 minutes.

In a large baking dish, arrange onions and bell peppers.

Remove chicken from marinade, discard marinade, and place chicken on top of vegetables.

Bake for 30 minutes or until chicken is cooked through.

Garnish with remaining cilantro and jalapeno.
