Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup of your favorite BBQ sauce
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced
  • Optional toppings: shredded cheese, crushed tortilla chips

Instructions

  1. Preheat grill to medium-high heat.

  2. Season the chicken with salt and pepper and grill for 6-8 minutes per side, until cooked through.

  3. Brush the BBQ sauce over the chicken and grill for an additional 1-2 minutes per side, until nicely charred.

  4. Let the chicken rest for 5 minutes, then slice into strips.

  5. In a large bowl, combine the salad greens, cherry tomatoes, red onion, corn, black beans, cilantro, and sliced avocado.

  6. Toss in the sliced chicken and any juices from the plate.

  7. Serve with optional toppings, if desired.
