  • 2 medium zucchinis
  • 1/4 cup of olive oil
  • 2 tbsp of lemon juice
  • 1 tbsp of honey
  • Salt and pepper
  • 1/4 cup of shaved parmesan cheese
  • 1/4 cup of toasted pine nuts
  • Fresh basil leaves

Instructions

  1. Wash and trim the zucchinis. Slice them into thin rounds using a mandoline or sharp knife.

  2. Arrange the slices on a platter.

  3. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.

  4. Drizzle the dressing over the zucchini slices.

  5. Sprinkle with parmesan cheese, pine nuts, and torn basil leaves.

  6. Serve immediately.
