How To Make Hole Mole’s Chicken Enchiladas Recipe
Delicious chicken enchiladas baked in a spicy sauce topped with gooey cheese.
Serves:
Ingredients
- 2 cups of shredded cooked chicken
- 12 corn tortillas
- 2 cups of enchilada sauce
- 1 cup of shredded cheddar cheese
- 1/4 cup of chopped cilantro
- Salt and pepper to taste
Instructions

Preheat oven to 350°F.

In a large bowl, mix together chicken, 1 cup of enchilada sauce, half of the cheddar cheese, and cilantro. Season with salt and pepper to taste.

Warm corn tortillas in microwave or on stovetop.

Fill each tortilla with chicken mixture and roll up tightly.

Place the enchiladas in a baking dish, seam side down.

Pour remaining enchilada sauce over the enchiladas.

Sprinkle remaining cheddar cheese on top.

Bake for 25-30 minutes, or until cheese is melted and bubbly.

Garnish with cilantro and serve hot.
