How To Make Hole Mole’s Carnitas Torta

A classic Mexican sandwich filled with tender pork carnitas, fresh veggies, and spicy salsa on a soft telera roll.

Serves:

Ingredients

  • 1 lb. pork shoulder, cut into chunks
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp. ground cumin
  • 1/2 tsp. dried oregano
  • Salt and pepper
  • 1/2 cup chicken broth
  • 4 telera rolls
  • Mayonnaise
  • Refried beans
  • Avocado slices
  • Sliced tomatoes
  • Shredded lettuce
  • Salsa

Instructions

  1. Season pork with cumin, oregano, salt, and pepper.

  2. Cook pork in a skillet until browned on all sides.

  3. Add pork, onion, garlic, and chicken broth to a slow cooker and cook on low for 3 hours.

  4. Preheat oven to 350°F and toast the telera rolls.

  5. Spread mayonnaise and refried beans on the bottom half of the rolls.

  6. Add pork, avocado, tomatoes, lettuce, and salsa.

  7. Top with the other half of the roll and serve.
