Ingredients
- 2 cups cooked white rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 red onion, sliced
- 2 bell peppers, sliced
- 1 tbsp olive oil
- 1 lb boneless chicken breast, sliced
- 1 tbsp cumin powder
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 cup fresh salsa
- 1 avocado, sliced
- Fresh cilantro, chopped
Instructions

In a large bowl, mix cooked rice and black beans. Set aside.

In a skillet over medium-high heat, sauté red onion and bell peppers in olive oil until tender.

Season sliced chicken breast with cumin powder, garlic powder, salt, and pepper. Grill for about 5-7 minutes on each side, until fully cooked.

Assemble bowls by layering rice and beans mixture, grilled veggies, and sliced chicken.
