Ingredients

  • 2 cups cooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red onion, sliced
  • 2 bell peppers, sliced
  • 1 tbsp olive oil
  • 1 lb boneless chicken breast, sliced
  • 1 tbsp cumin powder
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 cup fresh salsa
  • 1 avocado, sliced
  • Fresh cilantro, chopped

Instructions

  1. In a large bowl, mix cooked rice and black beans. Set aside.

  2. In a skillet over medium-high heat, sauté red onion and bell peppers in olive oil until tender.

  3. Season sliced chicken breast with cumin powder, garlic powder, salt, and pepper. Grill for about 5-7 minutes on each side, until fully cooked.

  4. Assemble bowls by layering rice and beans mixture, grilled veggies, and sliced chicken.

  5. Top with salsa, sliced avocado, and fresh cilantro.
