Ingredients

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow squash, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat grill to medium-high heat.

  2. In a large bowl, toss the sliced vegetables with olive oil, balsamic vinegar, salt, and black pepper.

  3. Place the vegetables on the grill and cook for 10-15 minutes or until slightly charred and tender, flipping once halfway through.

  4. Serve hot and enjoy!
