How To Make Freshii Ranchero Burrito
A delicious and healthy burrito filled with black beans, scrambled eggs, pico de gallo, avocado, and chipotle sauce.

Ingredients
- 4 large whole wheat tortillas
- 1 can of black beans (15 ounces), drained and rinsed
- 8 large eggs
- 1/2 cup of water
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of olive oil
- 1/2 cup of pico de gallo
- 1 avocado, sliced
- 1/4 cup of chipotle sauce
Instructions

Preheat oven to 350°F.

Warm the tortillas in the oven for 5 minutes.

In a mixing bowl, whisk the eggs, water, salt, and pepper until smooth.

Heat the olive oil in a non-stick skillet over medium heat.

Pour the egg mixture into the skillet and cook, stirring occasionally, for 3-4 minutes or until set.

Divide the black beans, scrambled eggs, pico de gallo, avocado slices, and chipotle sauce among the tortillas.
