How To Make Freshii Ranchero Burrito

A delicious and healthy burrito filled with black beans, scrambled eggs, pico de gallo, avocado, and chipotle sauce.

Ingredients

  • 4 large whole wheat tortillas
  • 1 can of black beans (15 ounces), drained and rinsed
  • 8 large eggs
  • 1/2 cup of water
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 1/2 cup of pico de gallo
  • 1 avocado, sliced
  • 1/4 cup of chipotle sauce

Instructions

  1. Preheat oven to 350°F.

  2. Warm the tortillas in the oven for 5 minutes.

  3. In a mixing bowl, whisk the eggs, water, salt, and pepper until smooth.

  4. Heat the olive oil in a non-stick skillet over medium heat.

  5. Pour the egg mixture into the skillet and cook, stirring occasionally, for 3-4 minutes or until set.

  6. Divide the black beans, scrambled eggs, pico de gallo, avocado slices, and chipotle sauce among the tortillas.

  7. Roll up the burritos tightly and serve warm.
