Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp grated ginger
  • 1 sweet potato, peeled and diced
  • 1 red bell pepper, diced
  • 1 tsp ground turmeric
  • 4 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1 cup kale, chopped
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger, and cook for 2-3 minutes until fragrant.

  2. Add sweet potato, red bell pepper, and turmeric. Cook for another 5-7 minutes until vegetables begin to soften.

  3. Add vegetable broth and chickpeas. Bring to a simmer and cook for 15-20 minutes until sweet potatoes are tender.

  4. Add kale and lemon juice. Cook for another 2-3 minutes until kale is wilted.

  5. Season with salt and pepper to taste and serve hot.
