How To Make Freshii Superfood Soup Recipe
This delicious soup is packed with various superfoods.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tsp grated ginger
- 1 sweet potato, peeled and diced
- 1 red bell pepper, diced
- 1 tsp ground turmeric
- 4 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 cup kale, chopped
- 1 lemon, juiced
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger, and cook for 2-3 minutes until fragrant.

Add sweet potato, red bell pepper, and turmeric. Cook for another 5-7 minutes until vegetables begin to soften.

Add vegetable broth and chickpeas. Bring to a simmer and cook for 15-20 minutes until sweet potatoes are tender.

Add kale and lemon juice. Cook for another 2-3 minutes until kale is wilted.

Season with salt and pepper to taste and serve hot.
