How To Make Slow Cooker Spicy Chicken Recipe

Unlike beef and pork, it’s quite uncommon to encounter tough cooked chicken. That’s why you’d often find that this poultry meat is often cooked hot and fast. However, that doesn’t mean that it doesn’t work for low and slow cooking, either.   • 2 lbs of boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 jalapeno pepper, seeded and diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro


  1. Place the chicken breasts in the slow cooker.

  2. In a separate bowl, mix together the diced onion, minced garlic, sliced bell peppers, diced jalapeno, diced tomatoes, tomato sauce, chili powder, cumin, paprika, cayenne pepper, salt, and pepper.

  3. Pour the mixture over the chicken in the slow cooker and stir to combine.

  4. Cook on low heat for 6 hours or on high heat for 3-4 hours, until the chicken is cooked through and tender.

  5. Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the sauce.

  6. Continue cooking for an additional 15 minutes to allow the flavors to meld together.

  7. Serve the spicy chicken over rice or in tortillas, garnished with chopped fresh cilantro.
