  • 1 lb. boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • Salt and pepper, to taste
  • Tortilla strips
  • Cilantro

Instructions

  1. Place chicken, black beans, corn, tomatoes, onion, and garlic in slow cooker.

  2. Add chicken broth, cumin, chili powder, salt, and pepper.

  3. Cook on low for 4 hours or high for 2 hours.

  4. Shred chicken with forks.

  5. Serve soup with tortilla strips and cilantro on top.
