Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups chicken broth
  • Chopped parsley, for garnish

Instructions

  1. Add chicken, rice, onion, bell pepper, and garlic to a slow cooker.

  2. In a small bowl, mix together paprika, onion powder, garlic powder, thyme, oregano, salt, and pepper. Sprinkle over chicken and rice mixture.

  3. Pour chicken broth over everything, stir gently to combine.

  4. Cook on high for 4 hours or on low for 6 hours.

  5. Once cooked, fluff the rice and serve with chopped parsley for garnish.
