How To Make Vegetarian Pastitsio

Ingredients
- 8 oz penne pasta
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups shredded mozzarella cheese
- 2 cups béchamel sauce (recipe here)
- Fresh parsley, for garnish
Instructions

Preheat oven to 375°F (190°C). Cook the penne pasta according to package instructions, then drain and set aside.

In a large skillet, heat olive oil over medium heat. Add onion, garlic, bell pepper, and zucchini. Cook until vegetables are tender, about 5 minutes.

Add diced tomatoes, dried oregano, dried basil, salt, and black pepper to the skillet. Stir to combine and let simmer for 10 minutes.

In a greased baking dish, spread half of the cooked penne pasta in an even layer. Top with half of the vegetable mixture and half of the shredded mozzarella cheese. Repeat the layers.

Pour the béchamel sauce evenly over the top of the dish.

Bake for 25-30 minutes, or until the cheese is bubbling and golden brown.

Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
