How To Make Chicken Madras

Ingredients
- 500g boneless chicken, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit
- 2 tsp Madras curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp chili powder
- 1 cup tomato puree
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro, for garnish
Instructions

Heat the vegetable oil in a large pan over medium heat. Add the onions and cook until softened and lightly browned.

Add the garlic, ginger, and green chilies to the pan. Cook for another 2 minutes, stirring occasionally.

In a small bowl, mix together the Madras curry powder, turmeric, cumin, coriander, and chili powder. Add this spice mixture to the pan and cook for 1 minute, stirring constantly.

Add the chicken pieces to the pan and cook until they are browned on all sides.

Pour in the tomato puree and coconut milk. Stir well to combine. Season with salt.

Reduce the heat to low, cover the pan, and simmer for 20 minutes, or until the chicken is cooked through and tender.

Garnish with fresh cilantro and serve hot with rice or naan bread.
