  • 500g boneless chicken, cut into pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 2-inch ginger, grated
  • 3 green chilies, slit
  • 2 tomatoes, pureed
  • 2 tsp Madras curry powder
  • 1 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)


  1. Heat oil in a large skillet over medium heat. Add onions and sauté until golden brown.

  2. Add garlic, ginger, and green chilies. Cook for 2 minutes until fragrant.

  3. Add chicken pieces and cook until they are lightly browned.

  4. Stir in tomato puree, Madras curry powder, turmeric powder, chili powder, cumin powder, and coriander powder. Mix well.

  5. Pour in coconut milk and season with salt. Bring the mixture to a simmer and cover the skillet. Cook for 20 minutes or until the chicken is cooked through and tender.

  6. Garnish with fresh cilantro before serving.

  7. Serve hot with steamed rice or naan bread.
