How To Make Slow Cooker Beef Bourguignon

Ingredients
- 1.5 pounds beef chuck roast, cut into cubes
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 cup button mushrooms, quartered
- 1 cup red wine
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 tablespoon all-purpose flour
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large skillet, cook the bacon until crispy. Remove bacon and set aside.

In the same skillet, brown the beef cubes in the bacon fat until well-seared. Transfer beef to the slow cooker.

Add onions, garlic, carrots, and mushrooms to the skillet, sauté until vegetables are softened. Transfer vegetables to the slow cooker.

In a small bowl, whisk together red wine, beef broth, tomato paste, flour, thyme, salt, and pepper. Pour mixture into the slow cooker.

Add the bay leaf and cooked bacon to the slow cooker. Stir everything together.

Cover the slow cooker and cook on low heat for 8 hours or on high heat for 4-6 hours, until beef is tender.

Serve the beef bourguignon over mashed potatoes, noodles, or crusty bread. Garnish with fresh parsley.
