Ingredients

  • 8 ounces of pasta
  • 2 tablespoons of butter
  • 1 pound of mushrooms, sliced
  • 3 cloves of garlic, minced
  • 1 cup of vegetable broth
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large skillet, melt the butter over medium heat. Add the mushrooms and garlic, and sauté until the mushrooms are golden brown.

  3. Pour in the vegetable broth and bring to a simmer. Cook for about 5 minutes or until the broth has reduced by half.

  4. Stir in the heavy cream and Parmesan cheese. Cook for 2-3 minutes, until the sauce has thickened.

  5. Add the cooked pasta to the skillet and toss to coat it in the sauce. Cook for an additional 2-3 minutes to heat through.

  6. Season with salt and pepper to taste. Garnish with chopped parsley before serving.
