How To Make Sticky Citrus Chicken with Carrots & Cashews

  • 4 chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 4 large carrots, peeled and sliced
  • 1/2 cup cashews
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish


  1. Preheat oven to 400°F (200°C).

  2. In a bowl, whisk together soy sauce, honey, orange juice, lemon juice, ginger, and garlic.

  3. Season chicken breasts with salt and pepper, then place them in a baking dish.

  4. Pour half of the marinade over the chicken and reserve the remaining half for later.

  5. Arrange carrots around the chicken in the baking dish.

  6. Drizzle the carrots with olive oil and season with salt and pepper.

  7. Bake for 20 minutes, then remove from the oven and sprinkle cashews over the carrots.

  8. Pour the remaining marinade over the chicken and carrots.

  9. Return to the oven and bake for an additional 10 minutes, or until the chicken is cooked through and the carrots are tender.

  10. Serve the sticky citrus chicken with roasted carrots and cashews, and garnish with fresh cilantro.
