How To Make Crockpot Mexican Chicken Breast Recipe
Tender, flavourful and easy to make Mexican chicken breast recipe cooked using a crockpot.

Ingredients
- 4 boneless, skinless chicken breasts
- 1 red onion, diced
- 1 red bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes and green chilies, undrained
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh cilantro leaves
Instructions

Add chicken breasts to the crockpot.

Add in the onion, bell pepper, black beans, corn, and diced tomatoes.

Add in the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper.

Cover and cook on high for 3-4 hours or low for 6-8 hours.

Remove the chicken breasts and shred them.

Add the shredded chicken back to the crockpot and stir in the cilantro.

Serve with rice, tortilla chips or in a tortilla.
