  • 2 cups cooked lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 slider buns
  • Toppings of your choice (lettuce, tomato, cheese, etc.)

Instructions

  1. In a large bowl, mash the cooked lentils until they have a paste-like consistency.

  2. Add the breadcrumbs, Parmesan cheese, parsley, onion, garlic, smoked paprika, cumin, salt, and pepper to the lentil mixture. Mix well.

  3. Shape the mixture into small patties, about the size of your slider buns.

  4. Heat the olive oil in a skillet over medium heat. Cook the lentil patties for about 3-4 minutes per side, or until they are browned and heated through.

  5. Toast the slider buns if desired.

  6. Assemble the sliders by placing a lentil patty on each bun, and topping with your favorite toppings.

  7. Serve the vegetarian sliders warm and enjoy!
