How To Make Chef John’s Classic Beef Stroganoff

Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp flour
- 2 tbsp butter
- 1 small onion, finely chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 cup sour cream
- 1 tbsp Dijon mustard
- 12 oz egg noodles, cooked according to package instructions
- Fresh parsley, chopped (for garnish)
Instructions

Season the beef with salt and black pepper. Dredge the beef in flour, shaking off any excess.

In a large skillet, melt the butter over medium-high heat. Add the beef slices in a single layer and cook until browned on both sides. Remove the beef from the skillet and set aside.

In the same skillet, add the chopped onion and sliced mushrooms. Cook until the mushrooms have released their liquid and become golden brown.

Add the minced garlic and cook for an additional 1 minute.

Stir in the beef broth and Worcestershire sauce, scraping the bottom of the skillet to release any browned bits. Bring the mixture to a simmer.

Return the beef to the skillet and simmer for about 10 minutes, or until the beef is cooked through and the sauce has thickened slightly.

In a small bowl, whisk together the sour cream and Dijon mustard. Stir the sour cream mixture into the skillet and heat through, but do not boil.

Serve the beef stroganoff over the cooked egg noodles. Garnish with fresh parsley.
