Ingredients

  • 2 lbs fresh clams, cleaned
  • 1/2 lb chorizo, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chorizo and cook until browned, about 5 minutes. Remove chorizo and set aside.

  2. In the same pot, add onion and garlic. Cook until onion is translucent, about 5 minutes.

  3. Add smoked paprika, dried thyme, salt, and pepper. Stir well to coat the onion and garlic.

  4. Pour in white wine and cook for 2 minutes to deglaze the pot.

  5. Add chicken broth, white beans, and cooked chorizo. Stir to combine.

  6. Bring the mixture to a simmer and add the clams. Cover the pot and cook for about 10 minutes or until the clams open.

  7. Discard any clams that do not open.

  8. Serve the stew hot, garnished with chopped parsley.
