How To Make African Spicy Bean Soup
This hearty soup is packed with spicy flavors of Africa, perfect for a chilly evening.
Serves:
Ingredients
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 2 tbsp Curry Powder
- 1 can of canned chopped tomatoes
- 2 cups of vegetable broth
- 2 cans of black beans, drained and rinsed
- 1 tsp chili flakes
- 1 tbsp of chopped fresh cilantro
- Salt and pepper to taste
Instructions

In a large pot, heat the olive oil over medium heat.

Add onions and garlic, sauté until translucent, approximately 3 minutes.

Add curry powder and chili flakes, stir to combine.

Pour in chopped tomatoes and vegetable broth, and bring it to a boil.

Reduce the heat, add black beans, and let simmer for 20-25 minutes.

Stir in cilantro and season with salt and pepper, to taste.
