How To Make Curried Prawn & Green Bean Pie

Ingredients
- 1 tbsp vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 500g prawns, peeled and deveined
- 200g green beans, trimmed and cut into bite-sized pieces
- 200ml coconut milk
- Salt and pepper to taste
- 2 sheets of puff pastry
Instructions

Preheat the oven to 200°C (400°F).

Heat the vegetable oil in a large pan over medium heat. Add the diced onion and minced garlic and cook until softened.

Add the curry powder, turmeric powder, and cumin powder to the pan and cook for 1-2 minutes until fragrant.

Add the prawns and green beans to the pan and cook for 3-4 minutes until the prawns are pink and cooked through.

Pour in the coconut milk and season with salt and pepper. Stir well and simmer for another 5 minutes.

Transfer the prawn and green bean mixture to a baking dish.

Place one sheet of puff pastry over the baking dish, trimming any excess. Use a fork to prick a few holes in the pastry.

Bake in the preheated oven for 25-30 minutes until the pastry is golden brown and crispy.

Serve the curried prawn & green bean pie hot.
