How To Make Microwave Caramel Popcorn

Ingredients
- 1/2 cup popcorn kernels
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter
- 1/4 cup light corn syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
Instructions

Place the popcorn kernels in a microwave-safe bowl and cover with a microwave-safe plate.

Microwave on high for 4-5 minutes, or until the popping slows down to 2 seconds between pops. Set aside.

In another microwave-safe bowl, combine the sugar, butter, and corn syrup. Microwave on high for 2 minutes, then stir well.

Microwave for another 2-3 minutes, or until the mixture turns a golden caramel color.

Remove from the microwave and quickly stir in the vanilla extract, salt, and baking soda. The mixture will bubble up, so be careful.

Pour the caramel over the popcorn and stir until all the popcorn is coated.

Microwave for an additional 1 minute, stirring every 15 seconds to evenly coat the popcorn.

Spread the caramel popcorn onto a baking sheet lined with parchment paper and let it cool completely.
