Serves:
Ingredients
- 1/2 cup popcorn kernels
- 1 cup granulated sugar
- 1/4 cup unsalted butter
- 1/4 cup light corn syrup
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1/4 tsp baking soda
Instructions
-
Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
-
Pop the popcorn kernels according to package instructions and transfer to a large bowl.
-
In a medium saucepan, combine the sugar, butter, and corn syrup. Cook over medium heat, stirring constantly, until the mixture turns golden brown and reaches a temperature of 300°F (150°C) on a candy thermometer.
-
Remove the saucepan from heat and quickly stir in the vanilla extract, salt, and baking soda. Be careful as the mixture will bubble up.
-
Immediately pour the caramel sauce over the popcorn and mix until all the popcorn is coated.
-
Transfer the caramel popcorn onto the prepared baking sheet, spreading it out in an even layer.
-
Bake in the oven for 30 minutes, stirring every 10 minutes to prevent burning.
-
Remove from the oven and let the caramel popcorn cool completely before serving.
