Ingredients
- 1 cup long grain rice
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions

Rinse the rice under cold water until the water runs clear. Drain well.

In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until softened.

Add the rice to the saucepan and stir to coat it with the oil. Cook for 2-3 minutes, stirring occasionally.

Add the vegetable broth, cumin, turmeric, cinnamon, cloves, salt, and black pepper to the saucepan. Bring to a boil.

Reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.

Remove the saucepan from the heat and let the rice sit, covered, for 5 minutes.

Fluff the rice with a fork and stir in the chopped parsley.
