Ingredients
- 2 lbs pork hocks
- 1 lb pork tongue
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp thyme
- 1 bay leaf
- 1 cup water
- 1/4 cup vinegar
Instructions

In a large pot, add pork hocks, pork tongue, onion, garlic, salt, pepper, thyme, bay leaf, water, and vinegar.

Bring to a boil, then reduce heat to low and simmer for 2 hours.

Remove meat from the pot and strain the broth, reserving it for later.

Shred the meat and place it into a loaf pan.

Pour enough of the reserved broth over the meat to cover it completely.

Place a weight on top of the meat and refrigerate for at least 1 hour, or until it sets.

Once the head cheese has set, remove it from the loaf pan and slice it thinly.
