How To Make Head Cheese Recipe

Serves:

Ingredients

  • 2 lbs pork hocks
  • 1 lb pork tongue
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp thyme
  • 1 bay leaf
  • 1 cup water
  • 1/4 cup vinegar

Instructions

  1. In a large pot, add pork hocks, pork tongue, onion, garlic, salt, pepper, thyme, bay leaf, water, and vinegar.

  2. Bring to a boil, then reduce heat to low and simmer for 2 hours.

  3. Remove meat from the pot and strain the broth, reserving it for later.

  4. Shred the meat and place it into a loaf pan.

  5. Pour enough of the reserved broth over the meat to cover it completely.

  6. Place a weight on top of the meat and refrigerate for at least 1 hour, or until it sets.

  7. Once the head cheese has set, remove it from the loaf pan and slice it thinly.
