How To Make Whole Grain Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers, tops removed and seeded
  • 1 cup whole grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 carrot, chopped
  • 1 cup canned diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F.

  2. Cook rice according to package directions.

  3. Meanwhile, in a large skillet over medium heat, sauté onion and garlic until softened.

  4. Add zucchini and carrot, and cook for 5-7 minutes.

  5. Add canned tomatoes, oregano, basil, salt, and pepper. Cook for another 5 minutes.

  6. Stir in cooked rice.

  7. Stuff each bell pepper with filling mixture and place in a baking dish.

  8. Cover with foil and bake for 30 minutes.

  9. Uncover, sprinkle with shredded mozzarella cheese and bake for an additional 5-7 minutes until cheese is melted and bubbly.

  10. Serve hot and enjoy!
