How To Make Charred Sweetcorn, Red Pepper & Bulgur Wheat Pilaf

Ingredients
- 2 cups bulgur wheat
- 4 ears of sweetcorn
- 1 red pepper
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups vegetable broth
- 1/4 cup chopped fresh cilantro
Instructions

Preheat the grill or stovetop grill pan.

Grill the sweetcorn and red pepper until charred on all sides. Remove from heat and let cool.

In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and cook until onions are translucent.

Add the bulgur wheat, cumin, paprika, salt, and black pepper to the skillet. Stir to combine and cook for 2 minutes.

Remove the kernels from the grilled sweetcorn and roughly chop the charred red pepper. Add them to the skillet along with the vegetable broth.

Bring the mixture to a simmer, then reduce heat to low, cover, and let cook for 15-20 minutes until the bulgur wheat is tender and the liquid has been absorbed.

Remove from heat and let sit for 5 minutes. Fluff with a fork.

Stir in the freshly chopped cilantro.

Serve the charred sweetcorn, red pepper, and bulgur wheat pilaf hot as a main course or side dish.
