How To Make Bulgur and Spinach Casserole Recipe

A delicious and healthy casserole dish made with bulgur wheat and spinach.

Ingredients

  • 1 cup bulgur wheat
  • 2 cups water
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 lb fresh spinach
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 375°F.
  2. In a medium saucepan, bring water to a boil. Add bulgur wheat, reduce heat, and simmer for 10-15 minutes or until fully cooked.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté for 2-3 minutes or until onion is translucent.
  4. Add spinach and cook until wilted.
  5. Add cooked bulgur, oregano, salt, and pepper. Mix well.
  6. Transfer mixture into a casserole dish.
  7. Top with crumbled feta cheese and chopped parsley.
  8. Bake for 20-25 minutes or until cheese is melted and golden brown.
