How To Make Fenugreek Grape Pickle

This Fenugreek Grape Pickle is a tasty addition to any dish, made with fenugreek, grapes, asafoetida, mustard seeds, and tamarind concentrate.

Serves:

Ingredients

  • 1cupfenugreek
  • 4tbspsesame oil
  • tspblack mustard seeds
  • 1tspasafoetida
  • 1tspsalt,or to taste, divided
  • 1cupsweet fresh grapes,seedless
  • 1tbspred chili powder,heaping
  • ½cupmedium concentrate tamarind juice,diluted tamarind paste, or powder, 2 tbsp lemon or lime juice, or 1 tbsp vinegar
  • 2tbspjaggery,or brown sugar, or honey

Instructions

  1. Soak the fenugreek seeds in water for 24 hours.

  2. Drain, wrap loosely in a cotton cloth and keep covered in a bowl for another 24 hours. The seeds should have sprouted.

  3. Heat the sesame oil in a non-stick pan. When hot, add the mustard seeds.

  4. After the mustard seeds splutter, add the asafoetida, and sprouted fenugreek.

  5. Add ½ the salt amount, mix, cover, and cook for 5 to 7 minutes on medium heat.

  6. Now add the grapes, the remaining salt, and the chili powder.

  7. Cover and cook for another 5 minutes.

  8. Add the tamarind juice, mix, and keep covered for another 3 minutes.

  9. Take off the lid, add the jaggery, and simmer for about 5 minutes until the oil starts to float on the top.

  10. Serve or store for up to 6 months.

  11. Enjoy.

Recipe Notes

To enhance the flavor, use dry red chilis instead of store-bought chile powder. Use 8 chilis for this quantity of pickle and add it to the oil at the beginning (before adding the mustard seeds). Fry for just about 45 seconds on low heat. Take just the chilis out, leave the oil in the pan and turn off the stove. After the chilis cool down in a few mins, grind them into a powder. Make the pickle in the chile-infused oil in the pan with the just-made chili powder.
