How To Make Aubergine Pickle

Ingredients

  • 2 large aubergines, cut into small cubes
  • 2 tablespoons oil
  • 2 teaspoons mustard seeds
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 teaspoons salt
  • 1 tablespoon vinegar
  • 1 tablespoon jaggery

Instructions

  1. Heat oil in a pan and add mustard seeds. Let them crackle.

  2. Add fenugreek seeds and sauté for a minute.

  3. Add aubergine cubes, turmeric powder, red chili powder, and salt. Mix well.

  4. Cook on medium heat until the aubergine is soft, stirring occasionally.

  5. Add vinegar and jaggery. Mix well and cook for another 2 minutes.

  6. Remove from heat and let it cool before transferring to a sterilized jar.

  7. Serve with your favorite meal or as a side dish.
