Serves:

Ingredients

  • 1 cup of rice
  • 1/2 pound of ground beef
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of chopped fresh dill
  • 1/4 cup of chopped fresh mint
  • 1/4 cup of chopped fresh onions
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 2 tablespoons of tomato paste
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground allspice
  • 30-40 grape leaves, packed in brine and rinsed

Instructions

  1. Cook the rice according to package instructions and set aside.

  2. In a large bowl, combine the cooked rice, ground beef, parsley, dill, mint, onions, olive oil, lemon juice, tomato paste, salt, black pepper, cinnamon, and allspice. Mix well.

  3. Place a grape leaf on a flat surface, shiny side down. Place a spoonful of the rice and beef mixture near the stem end of the leaf.

  4. Fold the sides of the leaf over the filling and roll tightly, like a burrito.

  5. Repeat with the remaining grape leaves and filling.

  6. Place the stuffed grape leaves, seam side down, in a pot. Add enough water to cover the grape leaves.

  7. Place a plate or heatproof lid on top of the grape leaves to keep them in place.

  8. Bring the water to a boil, then reduce the heat and simmer for 1 hour.

  9. Remove the stuffed grape leaves from the pot and let them cool slightly before serving.

  10. Serve warm or at room temperature.
