How To Make Sicilian Lentil Pasta Sauce Recipe

Ingredients
- 1 cup dried lentils
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can crushed tomatoes (400g)
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 250g pasta of your choice
- Grated Parmesan cheese for serving
Instructions

Cook the lentils according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. Sauté until the vegetables are softened.

Add the crushed tomatoes, dried basil, dried oregano, salt, and pepper to the skillet. Stir well to combine.

Bring the sauce to a simmer and cook for 30 minutes, stirring occasionally.

Meanwhile, cook the pasta according to package instructions. Drain and set aside.

Add the cooked lentils to the sauce and stir to combine. Cook for an additional 5 minutes to heat through.

Serve the sauce over the cooked pasta and sprinkle with grated Parmesan cheese.
