Ingredients

  • 12 ounces of spaghetti
  • 2 cups of fresh basil leaves
  • 1/3 cup of pine nuts
  • 1/2 cup of grated Parmesan cheese
  • 2 cloves of garlic
  • 1/2 cup of extra virgin olive oil
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of sun-dried tomatoes (optional)
  • 1/4 cup of sliced black olives (optional)
  • 1/4 cup of crumbled feta cheese (optional)

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  2. In a food processor or blender, combine the basil leaves, pine nuts, Parmesan cheese, garlic, olive oil, salt, and black pepper. Blend until smooth and creamy.

  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the pesto sauce and cook for 2 minutes, stirring occasionally.

  4. Add the cooked spaghetti to the skillet and toss to coat it evenly with the pesto sauce. Cook for an additional 2-3 minutes, until heated through.

  5. If desired, add the sun-dried tomatoes, black olives, and feta cheese to the skillet. Toss gently to combine.

  6. Serve the Sicilian-style pesto pasta hot, garnished with some extra grated Parmesan cheese and a sprinkle of fresh basil leaves.
